Avocados turn black when ripe, but most other varieties remain green. Easily peel by slicing it in half lengthwise and removing the seed. Then, use a spoon at the edge of the skin and scoop underneath the flesh. Keep flesh from browning by brushing with lemon or lime juice.

1 cup sour cream
I tablespoon extra-virgin olive oil
I (1-oz) packet dry ranch dressing mix
2 cloves garlic
1/2 teaspoon kosher salt
