Bacon-cheddar potato kabobs

Baby potatoes

Baby potatoes naturally grow small and are fully mature when harvested. They have tender skins and creamy texture. Avaliable in multiple varieties, including gold, red, and purple, baby potatoes cook quickly and are an interesting alternative to traditional potatoes.

Ingredients

18-24 baby potatoes (4-6 small potatoes per skewer)

2 tablespoons water

6 (12-inch) skewers

6 slices bacon

1/2 cup prepared cheese sauce

Steps

1. Preheat oven to 400°F. Place potatoes and water in a covered microwave-safe bowl; cook on HIGH 7-8 minutes or until semi-tender; drain.

2. Beginning with a slice of Bacon; thread one end through the skewer. Add a potato and weave the Bacon through the skewer. Add another potato and weave bacon on skewer. Repeat two more times. Repeat with remaining potatoes and bacon.

3. Place skewers on a baking sheet; bake 15-18 minutes or until bacon is crisp and potatoes tender. Microwave cheese sauce on HIGH 1-2 minutes or until hot; top skewers with sauce. Serve.

Other preparation method

Grill: Preheat grill (or grill pan). Place 4 cups halved baby potatoes, 4 tablespoons melted garlic and herb butter, 1/3 cup grated Parmesan cheese, 1/2 teaspoon salt, and 1/4 teaspoon pepper in foil pouch. Grill over indirect heat 15-20 minutes or until potatoes are fork tender.
